Wine can be kept satisfactorily between 7–18 °C (45–64 °F)
provided that any variations are steady. A heat of 13 °C (55 °F), just like
that present in the caves used-to store wine in England, is ideal for both
short-term storage and longterm aging of wine. Note that wine typically matures
differently and much more gradually in a temperature than it does at a higher
temperature. Once the temperature shifts are considerable, 14 levels or even
more, it will trigger your wine to breathe through the cork which considerably
speeds up the aging process.
